But the ketosis approach may be one of the most challenging because it will change the most sacred of all eating routines among Western cultures: enjoying a full-dish meal. It's certainly no picnic, but the procedure can be done simpler having the right products and program, and the results can be spectacular.

Wow! What an improvement. Would be interested in hearing what your doctor says about your results. Hopefully he has substantially reduced or eliminated any medication you were on. If not, something is amiss. The best way to accurately measure ketones is to test for hyroxy-butyric acid in the blood. The best meter is the Precision Xtra which you can find online. It measures your glucose levels and ketone levels. The only drawback is the test strips for the ketones are expensive ($5 a piece). I found good deals for these on ebay. You are most likely using ketones as a fuel now with all your weight loss. How do you feel? The main difference people talk about is their energy level. Plus you can exercise longer and recover faster if you are burning fat instead of glucose. Also, your hunger levels are greatly reduced if you are eating a high fat diet. I usually skip a meal or two just because I am not hungry. Hope that helps.
The transition process can be hard, especially when moving away from a diet that is normally carbohydrate heavy. This can sometimes bring on flu-like symptoms for a couple of days – ‘keto flu’ is a thing! Symptoms of the 'keto flu' include brain fog and fatigue, moodiness, migraines, and muscle cramping or tightness, which usually occur as a result of electrolyte changes or dehydration.
And good news for coffee addicts: you can still have your morning cup of joe. You’ll just need to adjust what you stir into it. Switch out flavored creamer for the real deal—full-fat heavy whipping cream, which has only 1 gram of carbs per tablespoon. If you want to give your java a jolt of sweet, stir in a low-carb sweetener that uses sugar alcohols. But if you can skip the sweet, even better. In time, you’ll retrain your palate to not crave a sugary start to the day. This is what everyone gets wrong about the keto diet.
Kale, mushrooms, onions, etc all have a surprising amount of carbs, but aren’t included in this three day kickstart. The weekly menu plans have specific serving sizes but it’s not necessary in this three day kickstart if you eat on plan and don’t deviate – as proven by the hundreds if not thousands of people who have had success with it. If you follow the three day kickstart as written you will get into ketosis.
Avoid wheat, oats, all rice (white, brown, jasmine), quinoa, couscous, pilaf, etc. Corn and all products containing corn, including popcorn, tortillas, grits, polenta, and cornmeal. All types of products made with flour, including bread, bagels, rolls, muffins, pasta, crackers, chips, pretzels, Oatmeal and cereals, granola bars, most protein bars or meal replacements, etc.
I totally understand how you feel! 😊 But the truth is that most people can't do that... speaking from my own experience. When I started following a low-carb diet my palate was completely different to what it is now and I couldn't imagine skipping sweeteners, bread alternatives and other substitutes. They helped me transition into the way I eat now. These days I don't use any sweeteners - or just a small amount in occasional treats. I keep my diet very simple and often cook with just 5-10 ingredients.
Speaking of eggs, they are one of the world’s most perfect foods. Everyone who cares about managing their weight and improving their health should be eating them. I buy eggs from a local farmer who allows his chickens to forage in an open pasture getting plenty of sunshine. The payoff is the rich, dark orange color of the egg yolks – store-bought eggs pale in comparison. If you can find a good source of fresh eggs from a local farmer, do it. Even with the premium price, they are still one of the most economical foods low carb foods. Even when money is tight, you can feed your family well. I eat eggs virtually every day because they provide me with the perfect ratio of protein to fat to keep me on the straight and narrow with my pursuit of nutritional ketosis. Please don’t fall for the idea that the yolk is somehow bad for you. Eat just the egg whites is like only driving a Mustang on the side streets without ever getting on the interstate. You’ll never experience the full benefits of eating eggs until you eat the whole egg!

I’m a post-menopausal baby boomer who hasn’t had any luck with low carb diets in recent years. I need to lose about 50 lbs, but at my age (59), and b/c I’ve taken a beta blocker for Atrial Fib since 1991, which is when I began to gain weight, I don’t seem to be able to lose weight anymore. That’s why I think the nutritional ketosis plan is my last hope.

When you eat less protein, fewer carbs, and at the same time, fast intermittently, it helps to significantly promote weight loss and also, lowers your insulin which in turn raises ketones. Also note that the more you add fat to your diet, the less weight you will lose. When you are at crossroads on your keto diet program, you can always seek professional guidance. Don’t forget, when you eat healthily, you remain healthier.
In general, as a society, we consume a lot of processed foods that are very high in sugar content. One idea that is behind the low carb weekly meal plans is that it will help to cut back the amount of sugar that we consume every day, especially the added sugars that you find in store-bought desserts and soft drinks. Mellissa, I didn’t read through all the comments … just half :) Wondering if this will work for someone who’s a diet controlled diabetic? The nutritionist said I should have 45 carb meals and 20 carb snacks … I’ve been gaining weight steadily BUT my blood sugars are awesome! I’m working with a double edge sword here. My biggest issue (other than always feeling bloated) is I have to have a good, hefty snack at midnight each night to keep my blood sugars within range in the morning. Needless to say my waistline no longer exists … buy hey … my blood sugars are good. *rolling eyes*
At the core of the classic keto diet is severely restricting intake of all or most foods with sugar and starch (carbohydrates). These foods are broken down into sugar (insulin and glucose) in our blood once we eat them, and if these levels become too high, extra calories are much more easily stored as body fat and results in unwanted weight gain. However, when glucose levels are cut off due to low-carb intake, the body starts to burn fat instead and produces ketones that can be measured in the blood (using urine strips, for example).
Apart from the few fermented soy products that are non-GMO and comes with great health benefits, it is recommended that you stay away from most soy products. Before you make use of any soy-based condiments, be sure of how it was processed. The same thing applies to wheat gluten which is found in most low-carb foods. With all that said, we move down to understanding your Net Carbs. This way, you will find it easier to keep track of your daily calories consumption. They are broken down as follows:

Other than grass-fed butter, my absolute favorite source of healthy dietary saturated fat is coconut oil. Contrary to popular belief, adding this quality fat to your diet does not make everything you consume taste like coconuts. My favorite brand is Nutiva Organic Virgin Coconut Oil; it imparts a pleasantly sweet smell with a very mild flavor of coconuts. I especially enjoy cooking my eggs in coconut oil along with sea salt and parsley; it gives them a nice “buttery” flavor. Because it is highly saturated, coconut oil has long been vilified as a nutritional demon. That misguided opinion is finally beginning to turn around. If you are trying to increase your level of blood ketones, then there’s probably no better way than to start adding coconut oil to your daily menus.

I was a little freaked! lol … I am new to Keto and I must say that I have been a little frustrated because I started this new keto lifestyle since the second week of February and I’ve been loosing and gaining the same freakin 5 lbs! No matter what your diet has been before now, keto will be a big change. If you're coming from a standard American diet (SAD), your carbs will go way down, your protein may either go up or down, and your fat will go way up. If you're coming from a bodybuilding-style diet, your fat intake will jump to alarming levels, and your protein will likely drop significantly.

So I have always put my bacon in the microwave, but is it better to fry it in its own grease? Just starting low carbing after reading Dr. Davis’s Wheat Belly, ran across Dana Carpender’s website, Jimmy’s website and others. Not everyone agrees with the fat. I’m going to try it–kind of scared though. Need to lose 30 to 40 pounds and get off blood pressure medicine and cholesteral medicine. I’m 65 and was always thin until 50.

Milk (only small amounts of raw, full-fat milk is allowed). Milk is not recommended for several reasons. Firstly, all the dairy products, milk is difficult to digest, as it lacks the "good" bacteria (eliminated through pasteurization) and may even contain hormones. Secondly, it is quite high in carbs (4-5 grams of carbs per 100 ml). For coffee and tea, replace milk with cream in reasonable amounts. You may have a small amount of raw milk but be aware of the extra carbs. Lastly, farmers in the United States use genetically engineered bovine growth hormone (rBGH). rBGH is injected to dairy cows to increase milk production. Opt for full-fat dairy labeled “NO rBGH”.
Keep up electrolytes. The major electrolytes in our bodies are sodium, potassium and magnesium. Because a low carb diet (especially a keto diet!) reduces the amount of water you store, this can flush out electrolytes and make you feel sick (called “keto flu”). This is temporary, but you can avoid or eliminate it by salting your food liberally, drinking broth (especially bone broth), and eating pickled vegetables. Some people also choose to take supplements for electrolytes, but it’s best to first consult a doctor that understands and supports keto/low carb lifestyles.
Is sour cream keto? If you are able to tolerate dairy, I can’t imagine why you wouldn’t want to add sour cream to just about everything you eat. It’s such a rich source of fat while providing amazing flavor and luxurious texture to anything you eat. I’ve put sour cream on top of steak, eggs, even vegetables. Just a couple of tablespoons of sour cream will give your fat intake the boost it needs to help you get into that glorious state of nutritional ketosis. I use the full-fat versions of either Breakstone’s or Daisy, depending on which is on sale. They go on something I eat just about every day. Enjoy!

Some people find this version less intimidating to start with or end with … but I will caution that your results will be less impressive.

We cannot make glucose and only have about 24 hours’ worth stored in our muscle tissue and liver. Nina- I like to make different olive oil dips….I’ll roast a head of garlic and mix the roasted cloves w/a lot of olive oil- which I like to pour on my chicken, steak, salad- basically anything I’m eating b/c it is so so good. I will also mix olive oil w/parsley, crushed garlic, and salt- also really good. I do find that although I eat the same foods everyday- I don’t suffer from boredom, I think b/c the food is so delish.

I am SO THANKFUL for you and this blog!! I am staring the Keto Diet today but have been researching for a week. So many sites, so many recipes but no PLANS. I like structure and I like following a set plan, so when I found that you have 3 day, 7 day, and 14 day plans along with an egg fast and a soup fast, I was SO EXCITED!!! I also just purchased your book today so I’m looking forward to reading it when it comes tomorrow.
After increasing water intake and replacing electrolytes, it should relieve most all symptoms of Keto Flu. For an average person that is starting a ketogenic diet, eating 20-30g of net carbs a day, the entire adaptation process will take about 4-5 days. My advice is to cut your carbs to fewer than 15g to ensure that you are well on your way into ketosis within one week. If you are experiencing any more keto flu symptoms, double check your electrolyte intake and adjust.
One cup of 2% fat plain Greek yogurt has about 10g net carbs. If you plan to restrict yourself to 20g net carbs a day, that will already be half of your allowance. So most people avoid yogurt or only eat a small amount of it. For example, I use 1 cup of Greek yogurt to make slow cooker chicken tikka masala, but since it’s spread out among 4 servings, its carb impact per serving is low.
Consumption of EPA and DHA in fish three times per week has been found to be a major predictor of better weight management because of improved insulin resistance (44).  Furthermore, consuming at least 2 servings of fish per week is associated with a decrease in various types of chronic disease including cancer and Alzheimer disease (45, 46).  It is also wise to use a high quality fish oil supplement to add more anti-inflammatory fish oils to your diet.
Our only complaint is that there are quite a few high protein recipes (although they generally all have a good fat ratio too) and we would love to see some other lower protein options for those that struggle with going over their protein limits.  Which brings us to the meal plans that are provided in the book.  While it is always nice to have your day planned out, we noticed that the days are quite high in calories and protein, with only one day under 1500 calories.  For females looking to lose weight, these meal plans may not fit your needs depending on your activity level and body.  Men may have a much easier time utilizing these meal plans.    
Some of the recommended condiments include mayonnaise, home-made bone broth, pesto, pickles, mustard, lime/lemon juice, whey protein without any additives or artificial sweeteners, lime/lemon zest, hormone-free gelatin, fermented condiments like sauerkraut, kombucha, kimchi, and others. There are recipes for homemade condiments that are devoid of any additives.
You might be thinking to yourself, “Say what? Dark chocolate is a keto snacks? Are you kidding me?” Nope, I’m not kidding. Lean in really close, because I’ve got a secret to share with you: I eat dark chocolate made with sugar EVERY SINGLE DAY on my nutritional ketosis plan. Yep, I sure do! Sometimes I’ll even have it with some of that Kerrygold grass-fed unsalted butter I mentioned – truly incredible. I’m not talking about cheap, fake dark chocolate or even the sugar-free ones you can buy in most stores. I have fallen head over heels for a brand of chocolate that is far superior to anything I’ve ever put in my mouth before – Taza 80% Stone Ground Dark Chocolate. This stuff contains little chunks of real cacao and even has real sugar in it (GASP!). But I eat a half and sometimes a whole bar of this daily with no negative impact on my blood sugar or blood ketone levels. It’s got to be the cocoa butter that make it such a perfect addition to my nutritional ketosis plan.

Net carbs is simply total carbs minus fiber and non-digestible sugar alcohols, like erythritol. (This doesn’t apply to high glycemic sugar alcohols, like maltitol.) We don’t have to count fiber and certain sugar alcohols in net carbs, because they either don’t get broken down by our bodies, are not absorbed, or are absorbed but not metabolized. In my two previous CarbSmart columns, I explained what the difference is between the relatively new concept of nutritional ketosis and the traditional Atkins diet and the 5 low-carb mistakes I feel I was making that nutritional ketosis has helped fix. As many of you know, I’ve been doing my own experiment of this concept for over five months and counting (read my updates for Day 1-30, Day 31-60, Day 61-90, Day 91-120 and Day 121-150) and it’s produced some pretty remarkable weight loss and health improvement results so far as I’ve lost over 50 pounds while enjoying robust energy, mental clarity, stable d blood sugars, complete satiety, zero cravings and counterintuitive results in the gym.
Bear in mind that those macronutrient ratios refer to calories from fat, protein, and carbohydrate, not actual grams of each. Protein and carbs have 4 calories per gram and fat has 9 calories per gram, so it’s actually a relatively easy task to let your fat calories pile up to keto-appropriate proportions if you consume fattier proteins and embellish your food with an extra bit of pure fat. To illustrate, if a portion of a particular food has 10 grams of protein, 10 grams of fat, and 0 grams of carbohydrate, that portion contains 130 calories, 90 from fat and 40 from protein, and is about 69.2% fat and 30.7% protein (allowing for rounding).
“Eggs have a lot of vitamins like vitamin A, B complex, D, K, E, calcium, and zinc,” says Ryan Weaver, a personal trainer and keto enthusiast. “That’s why eggs are an excellent choice for breakfast when you follow the keto diet. To avoid getting bored, you can try different ways of preparing the eggs—boiled, fried, or baked. Also, you can combine the eggs with different foods like bacon, ham, cheddar cheese, butter, mayonnaise, so you get a different recipe each day although using the same main ingredient.”
A small Feb. 20, 2017, study looked at the impact of a six-week ketogenic diet on physical fitness and body composition in 42 healthy adults. The study, published in the journal Nutrition & Metabolism, found a mildly negative impact on physical performance in terms of endurance capacity, peak power and faster exhaustion.
