I feel good, strong, energetic, focused. Eliminate sugar and flour-based foods and a person will “feel” great. In fact I accidentally licked a finger while cutting a frosted cake at church and the taste of sugar was awful. That’s a curious thing. My doctor does not approve of what I’m doing and urges me to eat 45 g carb at each meal. However, I eat 20-40 g carbs a day, usually at the low end of that range. Some meals have total 5 g carb in them, and that’s from a mound of selected veggies. The dr would like me to eat more than 90 g carbs day. The dr also warns me at every visit that I am rising death from ketoacidosis. Remember, I’m Type 2 so that warning is discounted. I exercise daily, moderately. My blood tests look like I do not have diabetes and my cholesterol is 120….while I gobble butter, sausage, bacon, whole eggs, cheese & avocados — formerly forbidden or restricdted foods. I have to say that with the weight loss, overall my calorie load is a great deal less. I’m not that hungry anymore. I don’t understand how this works biochemically in the body, but one thing I do know — it is working for me.
I remember the first time I tried an avocado – people had told me about how incredible they were. It was so hard I could barely get it open without slicing my thumb off. I didn’t know you have to let this fruit ripen until the “alligator” skin gives way to light pressure. Once I had my first taste of a fully-ripened Haas avocado, it was love at first bite! An avocado is cooling when you’re eating spicy foods, and offers a smooth texture change. It is such a great source of fats, I eat a whole avocado almost everyday with my eggs and wouldn’t imagine doing nutritional ketosis without it! It is at the top of my ketogenic diet foods list.
Remember, the point of the ketogenic diet is to enter ketosis by limiting your carbohydrate intake to about 5% of your total calorie needs and consuming about 75% of your calories in the form of fats. Vegetables and fruits naturally contain carbohydrates, and the ones included in the list above are lower in carbohydrates while not skimping on nutrients.
This is another big one. This is one step further to the dark side of food manufacturing. If a product is labeled low carb or sugar-free, it does not mean that it is good for you. Different manufacturers often label sugar alcohols as zero carbs, which they always are not. When trying low-carb or sugar-free products, do your research and make sure that you are not getting hidden carbs.

(note to self: buy an obnoxious whistle to wear around my neck at all times) I’m so happy to hear that you are excited and optimistic about losing weight with the plans! Here’s a nutritional list of some of the more commonly consumed vegetables on keto. Keep in mind that the weights are the same of everything listed so that it will impact the skew of the carb counts. For example, in a meal you may have 6 oz. of broccoli in the side, but you would not have 6 oz. worth of berries in the morning. You may mix 6 oz. of berries into a pudding with 4 servings.
Bladder stones …I think that depends of every body….drink LOTS of water, I am currently taking magnesium and potasium, I drank a mix of water, lemon and salt at the beginning to avoid the keto flu (specially headaches), MCT oil is a must! Coconut oil, virgin olive oil , butter (organic or grass fed- Hormone free Kerrygold)nuts (specially macadamians) almonds, pecans, bacon, Ham, sausages (check the sugar on it)Cheese, eggs, meat, fish, sour cream, heavy cream, vegetables.Just maintain your fat intake higher and you will be good ! It is very interesting to read about the keto/low card diet.I love to change my lifestyle as I an TYPE 2 Diabetic.I subscribed for a free printable low carb meal .The initial email stated that that I will receive an email for instructions to access the members area .Your free download will be there.However it is very deceiving ,I never got the 2nd email with instructions which is frustrating and not good .Hopefully this is not a way to get us to pay to get the printable version.
Carminative herbs like garlic and ginger add a pungent aroma to meals which is important for stimulating the flow of gastric juices in the stomach. Their natural oils increase bile flow so consider adding crushed garlic to your high fat meals and enjoy the smells circulating the kitchen. They are also high in vitamins A, polyphenols, amino acids and phytosterols. (3)
Avoid wheat, oats, all rice (white, brown, jasmine), quinoa, couscous, pilaf, etc. Corn and all products containing corn, including popcorn, tortillas, grits, polenta, and cornmeal. All types of products made with flour, including bread, bagels, rolls, muffins, pasta, crackers, chips, pretzels, Oatmeal and cereals, granola bars, most protein bars or meal replacements, etc.
Drink lots of water. This is especially crucial on a low carb or keto diet. Why? When you eat carbohydrates, your body stores the extra as glycogen in the liver, where they are bound to water molecules. Eating low carb depletes this glycogen, which allows you to burn fat – but it also means you are storing less water, making it easier to get dehydrated. Instead of the traditional recommendation of 8 cups of water per day, aim for 16 cups when following a low carb lifestyle.

On a ketogenic diet, you’re generally eating a diet that’s high in fat (roughly 70 percent of your total calories come from fat), moderate in protein (about 20 percent of your calories), and low in carbohydrate (about 5 percent of calories). By limiting carbohydrates (to usually less than 45 grams for the average person), your body lacks the glucose (from carbs) that it normally uses for energy, so it eventually switches over to burning fat as its primary fuel source instead; through a metabolic process called ketosis, the liver converts the fat into fragments of fatty acids called ketones, which power the brain and other organs and tissues.

Just started Keto 3 weeks ago, I still get confused on my protein consumption and what vegetables have high carb content. This is by far the best “diet” I’ve been on as I feel I can go on forever and I’m not missing anything I actually eat what I want. I eat when I’m hungry and stop when I’m full, just extra cautious what I put in my body.
Thank you so much for this post. I do really struggle to find ways of adding fat to my diet without adding more carbs or protein. I noticed you wrote that you cook your eggs in butter or coconut oil. Any other ideas on how to add more of these fats? I tend to over eat the veggies I cook in them like kale chips or cauliflower “rice”. I don’t mix meat or milk or eat pig which eliminates some popular options.

2 years ago I cut suger out of my diet and lowered my carbs. went from 230 down to 192, then I wasn’t so good about being careful and creeped back upto 207 and wasn’t a happy camper about it, but was having problems being good with a bunch of personal & work chaos going on. so a few days ago I really started looking at keto once again, now I’m back at 199 and looking forward to working through the keto flu, god I hate headaches but the scale is telling me to keep going
Dirty keto diet: “Dirty” is the apt term, as these version of keto follows the same strict percentages (75/20/5 of fat/protein/carbs) but rather than focusing on healthy versions of fat like coconut oil and wild salmon, you’re free to eat naughty but still keto friendly foods like bacon, sausage, pork rinds, diet sodas and even keto fast food. I do NOT recommend this.
This shopping list and meal plan can be heavily substituted to meet your needs. The first thing you’ll want to do is scan it over and make sure you like eating all of the foods listed here. Eating delicious foods is a big part of adhering to a diet long term! If there is a particular item you can’t stand just do a bit of research and find a substitution. Just make sure the item you decide to substitute in is similar in nutrition to the one you’re eliminating. This can be done with a quick google search or by using a website like My Fitness Pal.

Net carbs is simply total carbs minus fiber and non-digestible sugar alcohols, like erythritol. (This doesn’t apply to high glycemic sugar alcohols, like maltitol.) We don’t have to count fiber and certain sugar alcohols in net carbs, because they either don’t get broken down by our bodies, are not absorbed, or are absorbed but not metabolized. Question: I do not see portions indicated on the menus. If they are they, accept my apologies! For example, is the pancake recipe for one person/one meal? I hope so! Also, I’m looking at the buffalo wings. How many wings for one meal? I’m asking because, a. I might just eat them all, and b. I have a family of 4 and want to cook for everybody and need to plan accordingly.

Jimmy, your newsletters are terrific, very helpful & informative. I am Type 2 diabetic & for 6 mos have been on an eating lifestyle of low carb/mod protein/hi fat. In 6 mos I lost 48 # and bg went from 340 to a daily average of between 80 and 99. I don’t understand ketones very well. How do you measure ketones so accurately? Is it a special meter? What is the goal with measuring ketones? What do you “feel” that is so special or what happens when your ketones are optimal?
