The Ketogenic Diet is unlike any other diet in the world in that it utilizes a high fat, minimal carbohydrate and moderate protein system in order to reset your body’s ability to burn unwanted, stored fat. By restricting  carbohydrates that are converted into glucose, you begin the journey to re-program your metabolism to start burning stored fats for fuel and energy instead of first burning beneficial glycogen that is stored in your muscles.
A simple standby, but one that ketoers adore. 2 or 3 fried eggs and some bacon might not sound like much, but it’s full of protein that will keep you full and energized all morning. Take the opportunity on the weekend to lay your bacon strips on a single cookie sheet and bake in the oven for 20 minutes at 400 degrees. The result is the best bacon you’ve ever had, in a big batch, with no sitting over a popping, hissing frying pan.
Eat restricted amounts of nuts and seeds. Aim to eat nuts high in omega-3 and low in omega-6 like macadamia nuts and brazil nuts. Try to eat limited amounts of blackberries and raspberries as other berries are higher in carbs. Pair the foods you eat with added fats to keep hunger down. Consider cutting snacks out of your diet completely as it generally leads to slower weight loss.

Carbohydrates provide glucose, the preferred source of fuel for your body. Other "macros" or macronutrients – protein and fat – need to be digested and broken down into a usable form of fuel and building blocks, but this takes more time and energy compared to carbs. Because of the lengthier process, it is thought that restricting your intake of carbs will force your body to rely on other sources for fuel, and in theory, this would mean you burn more calories trying to get usable energy from your food and/or you start to burn more fat stores for energy.

On a “strict” (standard) keto diet, fats typically provides about 70 percent to 80 percent of total daily calories, protein about 15 percent to 20 percent, and carbohydrates just around 5 percent. However, a more “moderate” approach to the keto diet is also a good option for many people that can allow for an easier transition into very low-carb eating and more flexibility (more on these types of plans below).
A review of multiple studies in the journal Nutrients found that ketogenic diets are connected to significant reductions in total cholesterol, increases in “good” HDL cholesterol levels, dips in triglycerides levels and decreases in “bad” LDL cholesterol; there are questions as to whether diets high in saturated fat negate these benefits. The same paper reports that a ketogenic may slightly reduce blood pressure, but science is still very scant on this point.
I was really looking forward to this book as there is so much info out there and I really needed something to simplify the specifics. Well...I was playing around with the sample menus and adding them into myfitnesspal and the grams he listed per meal plan are totally off (and not in a favorable sense) from MFP...and I find MFP to be very accurate. So be careful, when you think you’re eating a specific amount carbs/protein grams, that just isn’t the case.

Jimmy — I’d love to hear you do a podcast with an expert on diabetes who could advise those of us on insulin. I have been VLC on WB (Wheat Belly) for two months (and on-again-off-again kinda sorta LC for twenty years!) and I still can’t get my blood sugars down where they should be. I hate taking so much insulin because it is a fat-storage hormone. I feel so sad and discouraged and stuck between a rock and a hard place …. do I decrease the insulin which will result in higher blood sugar, or do I increase the insulin (no! not MORE!) and get my blood sugars down to where Dr. Richard K. Bernstein, the LC diabetes expert, would like them to be? I am not losing on VLC and I have been totally honest and faithful for two months.
I don’t want to sound — or be — judgemental or sanctimonious. I know that each person’s keto journey is their own to travel. Keto diets, like most low carb diets, work through the elimination of glucose. Because most folks live on a high carb diet, our bodies normally run on glucose (or sugar) for energy. We cannot make glucose and only have about 24 hours’ worth stored in our muscle tissue and liver. Once glucose is no longer available from food sources, we begin to burn stored fat instead, or fat from our food.
Cheese is one of my favorite foods. Sadly, most people think Velveeta and American cheese are cheese. Nope! Not even close. They are highly-processed, cheese-like products that you really don’t want to eat, no matter how low the carb counts might be. Hard cheeses like cheddar, Monterey Jack, and Swiss are better choices. Find the ones that you enjoy, and be sure to buy the full-fat versions. Selecting low-fat cheeses defeats the purpose, and won’t help you reach nutritional ketosis. Cheese is so versatile! Put on top of just about anything, or eat us all by itself. I’ve even found that spreading cream cheese (see below) between two slices of cheddar cheese is an excellent high-fat, moderate protein, low-carb snack. I’ve also found cheese adds the perfect extra ration of protein on days that I lift weights at the gym. Can you tell I love my cheese?

This is another big one. This is one step further to the dark side of food manufacturing. If a product is labeled low carb or sugar-free, it does not mean that it is good for you. Different manufacturers often label sugar alcohols as zero carbs, which they always are not. When trying low-carb or sugar-free products, do your research and make sure that you are not getting hidden carbs.
Maya, I think what you are doing is brilliant. I am a 70-year old professional woman, educator and coach. I’ve grown our family vegetables every summer since I can remember. However, health conscious 20 or 30 years ago is a far different scenario today. Hey Sherry, all of my recipes call for Whole Eggs. It looks like my recipe plugin is adding the word "White" because I use white eggs in my calculator. It's just a title issue. I am updating them all to read Large Eggs. You are not the first person that thought it was supposed to be egg whites so I need to get these changed ASAP! Great job, Jimmy! Do you eat Macadamia nuts or did you just forget to put them on the list? I think they are about 95% fat so they make a very good meal item on a LCHF menu plan. I need to lose some weight and I hate to be cold so CT is out! That leaves keto-adaptation. I’m about 5 chapters into “The Art and Science of Low Carbohydrate Performance” and I’ve already identified a major mistake I was making in my LCHF strategy to lose weight! I have a lot of travel coming up in the next couple of months, not to mention the Christmas season, but I’m looking forward to slamming my body into major ketosis and staying there for awhile in January. I’m just starting this today. My intent is to be keto, but at the very least low carb. The biggest obstacle is that I’m vegetarian, so I have to eliminate the meat section. I plan on continuing with limited cheese and will look at tofu options. But my question is actually about olives! I understand they are low carb, but I buy in bulk and so there is no label to refer to. Is there a standard of net carbs you can advise for large green olives (stuffed with pimento) and Kalamata olives (for greek salads). thanks! Lois
Try Googling “TDEE Calculator”. Once you plug in your stats, the site will calculate your total daily energy expenditure. This is a useful guide in determining how many calories to eat. From there, if you are trying to lose weight, just reduce your caloric intake, increase your expenditure (through exercising more), or use a combination of the two.

Remember that once you reach your goal weight you will be in maintenance mode and will have more food options. You may find that bananas cause you to crave sweets and may never eat them again, but I loved adding fruits back in my diet!

The best part of low carb eating is that you can still have rich, savory foods – dieting isn’t really a part of the lifestyle. Your body regulates your hunger naturally, so keeping your carbs low is the main concern. Being able to do that while still enjoying roast, fish, and big, healthy salads is what makes low carb so easy to stick with, and keep the weight off for good.

Trust me, I do make mistakes from time to time, but Keto is actually a low carb, moderate protein, high fat diet. You can have fruit on Keto. That's the great thing about Keto as long as it fits your macros and won't throw you out of ketosis you can eat a variety of foods and you should! Natural and clean foods are great sources of vitamins and minerals that your bodies need to thrive and survive and while it's a great idea to go easy on foods that will cause insulin spikes when you first start Keto once you reach your goal weight and entire maintence mode you can add more and more fruits and veggies. What many people don't understand is glycemic load and glycemic index and that's something I plan to start talking about here very soon! We aren't paleo believe me my family wishes we were! Thanks for the reply, Jimmy, but I’m not sure you understood what I was asking. What I’m trying to understand is how you keep your total protein level for the day at moderate when many of the high fat foods you eat daily are also high in protein? Doesn’t that mean you’re eating high protein too? This is where I’m confused — how to eat high fat without over eating protein since many of the fats mentioned are also proteins.
Funny story, I didn’t mean to start the keto diet. My best friend has been doing it for a few months, and I was not really paying close attention to her journey. I assumed it was too restrictive for me, and I love food, so conversely hate “restrictive”. I’ve been lowering calories, eating more protein/vegetables, fewer carbs and working out. I feel great, but I’m not really losing weight, which is frustrating. But, being 44, i was beginning to accept it as part of my metabolic process. The funny thing is, one day I felt like total, deep-fried dog crap. It was right before going on vacation: body aches, dizziness, irritability, I was sure I caught the flu. IN SUMMER!! Awful. However, the next day I woke up, feeling mildly better, and a conversation with my bestie came back to me. Could this be keto flu???? I loaded up on electrolytes that day, WHAM it was gone. I went on vacation and just limited my carbs because I wanted to eat all the good stuff (fatty, hot cheesy, meaty scrumptiousness), but not get gluten bloat. I LOST WEIGHT. YEAAHHHH!!!!!! So I did some research and realized that keto was definitely for me because it really is all my favorite foods. I love to cook, so I had been creating clean, gluten free recipes for quite some time. So now I’m here with you because I loved the name of your blog, just about every recipe appeals to me, as does your writing style. So relatable. I just wanted to share how excited I am to be here, at ground zero of what is to me, a life changing experience.
