When it comes to the consumption of meat on keto diet, it is not just any type of meat that you consume. The most recommended type of meat is grass-fed which includes lamb, beef, venison, goat, etc. Wild animals are also good sources of meat for keto diet. Some of the organs that are known to be very nutritious include the kidneys, heart, and liver. Pastured poultry and pork are also good as they are known to have a high content of healthy omega 3 fatty acids.

Be aware of the effects of nightshades on your body; while they are permitted in ketosis, they cause inflammatory diseases like rheumatoid arthritis in sensitive people. Nightshades include tomatoes, tomatillos, peppers, okra, and eggplant. For a Bulletproof ketosis, also limit onions and garlic, which tend to be moldy and can disrupt your alpha brain waves. Regarding dark chocolate, I’ll have to check out the Taza, as I’ve never heard of it before and it sounds a little similar to my favorite: Endangered Species 88% (chocolatebar.com). It has a slightly coarse mouth-feel — much more interesting than, say, Ghirardelli, which I find too smooth and bland — and the flavor has hints of coffee bean.

Here’s a nutritional list of some of the more commonly consumed vegetables on keto. Keep in mind that the weights are the same of everything listed so that it will impact the skew of the carb counts. For example, in a meal you may have 6 oz. of broccoli in the side, but you would not have 6 oz. worth of berries in the morning. You may mix 6 oz. of berries into a pudding with 4 servings.
A final guideline: Even if you’re keto, portions of fat still matter, says Jill Keene, RDN, in White Plains, New York. “How much you specifically eat depends on your calorie needs and goals, but overconsuming fat can cause weight gain,” she says. Also, considering fat is your body’s main fuel source on a keto diet, she advises spreading out your fats evenly throughout the day.
Tropical fruit (pineapple, mango, banana, papaya, etc.) and some high-carb fruit (tangerine, grapes, etc.) Also avoid fruit juices (yes, even 100% fresh juices!) - better to drink smoothies if any, but either way very limited. Juices are just like sugary water, but smoothies have fiber, which is at least more sating. This also includes dried fruit (dates, raisins, etc).
A lot of people take their macros as a “set in stone” type of thing. You shouldn’t worry about hitting the mark every single day to the dot. If you’re a few calories over some days, a few calories under on others – it’s fine. Everything will even itself out in the end. It’s all about a long term plan that can work for you, and not the other way around.
"Plenty of people jump right in, thinking all they have to do is cut carbs and increase fat. All of a sudden, they hit a wall and get 'keto flu.' They feel tired, lethargic, and experience headaches," Wittrock says. "The primary reason they get these symptoms is lack of the three primary electrolytes: sodium, potassium, and magnesium. If you're deficient in any of these, you'll suffer mentally and physically. This is the single biggest reason people fail on the keto diet."
Despite its bad reputation, consuming the egg yolk is a key part of receiving all the great health benefits eggs have to offer.  The egg yolk is concentrated with essential nutrients like folate, B12, zinc and choline.  It is also rich in the fat burning compound conjugated linoleic acid (CLA) and the powerful and hard to get fat soluble vitamins A, D, E and K2.
I just don’t understand why people still need it. I am so elated to be free from its hold! They will say, “Look what I found!” They’ll show a label that says “LOW CARB” or “KETO.” It often has a list of ingredients that is as long as one’s arm. Or it is a low-carb version of some high-carb treat, like candies, syrups, sweets or desserts. Artificial sweeteners abound. High-priced supplements, MCT oils and exogenous ketones are common.
Avoid meat with condiments. Because, even if you’re enjoying a 4th of July barbecue with grass-fed burgers, a dollop of ketchup might be all it takes to kick you out of ketosis. (Depending on many factors, you may need to limit your total net carbs to 25-50 grams per day to stay in ketosis.) So, enhance your meats with natural spices and herbs instead. 

When trying to shift from a high carb diet to a ketogenic diet, cravings can definitely get strong. It’s always best to try to clean house before you start so that you don’t have food around you that can lead to cravings. We recommend that when switching to keto, you restrict using sweeteners completely for the first 30 days. It normally leads to breaking sugar addiction and ultimately not having cravings.
Don’t stick to chicken and steak just because you’re comfortable cooking them. Make dinner time the place where you can try new meats and recipes that increase your keto recipe resources. “At lunch and dinner, you can be creative and experiment,” Weaver says. “Just focus on cooking meat—pork, chicken, lamb, beef, or seafood. Meat is rich in iron and fish contains omega-3 fatty acids and vitamin D. Use only organic oils, such as avocado oil, coconut oil, and olive oil.” Read up on these things you have to know before starting the keto diet.

You need a new doctor!!! He certainly has no clue about how critical it is to move away from insulin resistance to insulin sensitivity. 45 g carbs each meal is insane. That is exactly why you were in the diabetic condition. Sounds like you follow your own healthy path, and you are living proof it works. Sometimes it’s hard to stand up to doctors (we all need to start), but you really need to drop him if he cannot understand what you are doing. His knowledge of nutrition is based on the 1970’s food pyramid. Bet ya he told you to reduce or eliminate all fat too. My advice is to RUN!

When I first started keto I had a hard time figuring out what I could and couldn’t eat, which is why I decided to create this huge list for you!

Most carbs you consume are broken down into sugar that enters the bloodstream. When you rein in carbohydrates on the keto diet, you have lower levels of blood glucose (high blood glucose can lead to diabetes). A study in the journal Nutrition reveals that a ketogenic diet improves blood glucose levels in type 2 diabetics more significantly than a low-calorie diet and can also decrease the dosage of your diabetes meds.

1) Fat weighs less than healthy muscle… EVEN IF you are not showing a loss in the scales… check your clothes.. they’ll be fitting better… If you lacked good muscle tissue.. eating the protein will rebuild that. If you were VERY out of shape, your body will feel GREAT with all the new muscle, but it DOES weigh more… that will not stop you from losing, you just need to stick it out… you will lose inches even if you’re not losing lbs…

At the moment there are so many ways to dieting that claim to help both men and women shed extra pounds and achieve their weight loss set goals. Of course, many of these approaches fail to give users the results that they are striving for. All too often, you find that many people adopt these methods too fast and find themselves struggling in the middle of the process, something that leads to serious dissatisfaction.
I’m just starting this today. My intent is to be keto, but at the very least low carb. The biggest obstacle is that I’m vegetarian, so I have to eliminate the meat section. I plan on continuing with limited cheese and will look at tofu options. But my question is actually about olives! I understand they are low carb, but I buy in bulk and so there is no label to refer to. When it comes to starting the keto diet (or any diet for that matter), there's one thing all experts agree on. You *must* have a plan. "Never try to wing a keto diet," says Julie Stefanski, R.D.N., C.S.S.D., L.D.N., a dietitian based in York, PA, who specializes in the ketogenic diet. "Set a start date and get prepared by reorganizing your pantry, planning out meal and snack options, and purchasing appropriate foods and dietary supplements," she says. "The biggest reason people have a hard time sticking with keto is that people don't have enough interesting foods to turn to, and high-carb favorites win out over good intention. If you didn't buy foods at the grocery store that fit the guidelines, there won't be an easy option in the fridge when you really need it." A slice of cheese contains 115 calories, 7 g of protein, 9 g of fat (5 g of saturated fat), about ½ g of carbohydrate, and no fiber, per the USDA. The saturated fat qualifies it as a food you ought to limit, but some research suggests the food has health benefits as well. A meta-analysis published in December 2017 in the European Journal of Nutrition found that cheese eating was associated with a 10 percent lower risk of heart disease and stroke, particularly for those consuming about 1.5 oz (or a slice and a half) per day.

In addition, low carb diets, along with exercise, can be very effective at helping alleviate the symptoms and progression of type 2 diabetes. Beyond that, ketosis itself is appetite-suppressing, meaning your hunger will naturally check itself, increasing your caloric deficit and making you lose fat even faster.
When you eat foods high in carbohydrates and fat, your body naturally produces glucose. Carbohydrates are the easiest thing for the body to process, and therefore it will use them first – resulting in the excess fats to be stored immediately. In turn, this causes weight gain and health problems that are associated with high fat, high carbohydrate diets (NOT keto).

Eggs are highly regarded as one of the perfect breakfast foods on the ketogenic diet. They are versatile and can be incorporated into many different dishes in many different forms. Sorry, maybe this is a German thing, but here there is no Philadelphia cheese with 74% fat. The highest fat version has 69% of fat in the dry mass, so if you eat the cheese, you eat 24,5 g fat in 100 g cheese. Full fat hard cheeses usually have around 40 to 48% fat in the dry mass, which would also probably come to around 24g fat in 100g cheese. Same with sour cream. And I haven’t found a dark chocolate with 65% fat either yet The kind I have at home, also with 81% chocolate has 42,8g fat per 100g. Although in the chocolate area I would see the best chances of finding a brand with more fat. Or you’ll just have to send me a bar! Are US% different from German %? Or is US Philadelphia different from German Philadelphia? I’ve been wondering about this for a long time.
Question: I do not see portions indicated on the menus. If they are they, accept my apologies! For example, is the pancake recipe for one person/one meal? I hope so! Also, I’m looking at the buffalo wings. How many wings for one meal? I’m asking because, a. I might just eat them all, and b. I have a family of 4 and want to cook for everybody and need to plan accordingly.

A lot of people on the keto diet tend to go absolutely overboard with the unhealthy food that they pack into their plan. Sure a bunch of cheese, mayonnaise and bacon will fit into a seventy-five percent fat allowance, however, for your health these foods are not always the best option. Your day to day seventy-five percent fat allowance is meant to be used for healthy sources of fat such as such avocados, coconut oil, whole eggs, nuts and fats found in unprocessed meats such as beef, salmon, chicken thighs, ground pork or turkey.
So once you've swapped out your rice and pasta for cauliflower and zoodles, you may start to wonder how to monitor your ketosis. While there are physical indicators like weight loss, reduced appetite and improved energy, the most accurate way to measure ketosis is by monitoring blood ketone levels, which can be easily accomplished through the use of a ketone meter like the Abbott Precision XTRA. This tool measures both blood sugar and ketones which is far more accurate than competing products that measure ketones in urine.

Other than grass-fed butter, my absolute favorite source of healthy dietary saturated fat is coconut oil. Contrary to popular belief, adding this quality fat to your diet does not make everything you consume taste like coconuts. My favorite brand is Nutiva Organic Virgin Coconut Oil; it imparts a pleasantly sweet smell with a very mild flavor of coconuts. I especially enjoy cooking my eggs in coconut oil along with sea salt and parsley; it gives them a nice “buttery” flavor. Because it is highly saturated, coconut oil has long been vilified as a nutritional demon. That misguided opinion is finally beginning to turn around. If you are trying to increase your level of blood ketones, then there’s probably no better way than to start adding coconut oil to your daily menus.
There is one gotcha with eggs that needs to be stated. Despite the high fat content, you can actually get an insulin spike from consuming too many eggs at once. The yolks are high in Leucine, and the protein of egg whites is rapidly utilized. That combo (Leucine + highly bioavailable amino acids) is one that bodybuilders use to create a sizeable insulin spike in the absence of carbohydrates.

Your menus are great, you make it easy with the shopping lists, (now if I could just find someone to do the shopping for me ;-)) I usually fall off the wagon to easy, my usual excuse not knowing what to make, but with your menus and lists it gives me no excuse. Try Googling “TDEE Calculator”. Once you plug in your stats, the site will calculate your total daily energy expenditure. This is a useful guide in determining how many calories to eat. From there, if you are trying to lose weight, just reduce your caloric intake, increase your expenditure (through exercising more), or use a combination of the two.
A: The amount of weight you lose is entirely dependent on you. Obviously adding exercise to your regimen will speed up your weight loss. Cutting out things that are common “stall” causes is also a good thing. Artificial sweeteners, dairy, wheat products and by-products (wheat gluten, wheat flours, and anything with an identifiable wheat product in it).

Essential fatty acids (the omegas) provide core functions to the human body, but they are often times out of balance when on a standard diet. On keto, with a little bit of preparation, your omega fatty acids are easily manageable. There are certain times or occasions that require popping of a few bottles. In such situation, you should strictly stick to dry white wine, dry red wine, and unsweetened spirits. If you are on keto diet for weight loss, then you should completely avoid alcohol but if on the diet for weight maintenance, you can take the above mentioned occasionally. Now this brings us to foods that you should COMPLETELY AVOID when you are on keto diet. This includes every food that is rich in carbohydrates, processed foods, and factory-farmed meat and fish sources. Breaking them down as follows:

Ketosis takes some time to get into – about two weeks of low carb eating is required for the initial adaptation. During this time there will be bouts of sluggishness, fatigue, headaches, and some gastrointestinal issues as you adapt, often referred to as “keto flu“. Proper electrolyte intake will correct most of these issues. In addition, the “diet” aspect of this ketogenic diet plan – that is, the caloric restriction – shouldn’t be worried about. Weight loss will come as your body regulates appetite as it the addiction to sugar and processed food lessens, so restricting calories during the initial two weeks isn’t recommended.
Jimmy — I’d love to hear you do a podcast with an expert on diabetes who could advise those of us on insulin. I have been VLC on WB (Wheat Belly) for two months (and on-again-off-again kinda sorta LC for twenty years!) and I still can’t get my blood sugars down where they should be. I hate taking so much insulin because it is a fat-storage hormone. I feel so sad and discouraged and stuck between a rock and a hard place …. do I decrease the insulin which will result in higher blood sugar, or do I increase the insulin (no! not MORE!) and get my blood sugars down to where Dr. Richard K. Bernstein, the LC diabetes expert, would like them to be? I am not losing on VLC and I have been totally honest and faithful for two months.

What I’m trying to understand is how you keep your total protein level for the day at moderate when many of the high fat foods you eat daily are also high in protein? Doesn’t that mean you’re eating high protein too? This is where I’m confused — how to eat high fat without over eating protein since many of the fats mentioned are also proteins.

Yea, no bread/pasta for me, by all accounts I was eating a (what I thought and what everyone would tell me, even a dietician I went to!) ‘healthy’ diet of whole grains, rice, fruit, vegetables, low fat, etc. and couldn’t understand why I was steadily gaining weight. That’s what led me here, as I was getting so frustrated and the more I read up on low carb/ketosis and how the body processes even conventionally healthy foods, it made sense to me, but I don’t think I can give up oatmeal and fruit forever! So I will definitely just make sure I only eat those in small amounts, but that is much farther down the road anyway.. I’m on to Week 1 and I’ll post an update at the end of the week. Thanks again!


That doesn’t mean you’ll go hungry on a diet. It’s quite the opposite! You’re not starving yourself of calories but of carbohydrates. Your body won’t go into what’s known as starvation mode, which is where your metabolic rate drops considerably. You’re adding more fat to the diet and taking out the carbs, so the metabolism can still work, and you get the energy you need.
