If you are considering a fast to jumpstart your Ketogenic diet,  it is important to stay hydrated. Track your water intake and be sure to consume a minimum of 2 liters per day. Consuming sea salt may also help keep energy levels up by replenishing your electrolytes. Fasting for at least 4 days can result in ketosis. Be sure to measure your ketone levels and other vitals during your fast. 
You can have a completely smooth transition into ketosis, or…not. While your body is adapting to using ketones as your new fuel source, you may experience a range of uncomfortable short-term symptoms. These symptoms are referred to as “the keto flu.” Low-sodium levels are often to blame for symptoms keto flu, since the kidneys secrete more sodium when you’re in ketosis, says Volek. This plan is very high on protein. I’ve learned that high healthy fat is what’s needed, not high protein.. as I am now kicked out of ketosis due to high protein intake (insulin’s fault). Given the fact i didn’t eat a bowl of salad per day (my tummy doesn’t digest salad well at all – i get bloated), but i do eat broccoli (i don’t get bloated from those strangely enough), cauliflower, asparagus, mushrooms… tomatoes (rarely, though). So, my question is… are you in ketosis following the menu you’ve presented? I’m 5 months into Keto and the last 3 weeks i am not in ketosis. My carb intake is 20-30g… but my protein is pretty high.

ShenaynayTaytay Of course I’ve heard of erythritol, it’s just not considered “natural” by the paleo folks who I listen to in terms of calling a sweetener natural. Erythritol is the “safest” but is still tied to leaky gut, etc. It also requires a significant amount to sweeten recipes, rather than a pinch of stevia. Everyone is welcome to use whichever sweeteners they like, I even use sucralose sometimes. These are my “best practices,” not rules. 🙂
Now, what should you eat? There are endless combinations of food and it really depends on your personal preference. I put together a simple 3 day keto menu plan to get you started. This is what works for me, and because my body knows the drill, I can actually get back into ketosis in less than 2 days on this plan. If you are new to low carb, it may take you as long as 4 to 5 days. Don’t despair, it will happen.

You need a new doctor!!! He certainly has no clue about how critical it is to move away from insulin resistance to insulin sensitivity. 45 g carbs each meal is insane. That is exactly why you were in the diabetic condition. Sounds like you follow your own healthy path, and you are living proof it works. Sometimes it’s hard to stand up to doctors (we all need to start), but you really need to drop him if he cannot understand what you are doing. His knowledge of nutrition is based on the 1970’s food pyramid. Bet ya he told you to reduce or eliminate all fat too. My advice is to RUN!
I said earlier that sour cream was amazing with virtually any food you could consume? Well, the same could be said about cream cheese! This stuff has an amazing fat profile that will give your meals the kind of boost they need to help you reach nutritional ketosis. If you’ve never put cream cheese in your eggs before, lemme tell you that’s an experience you won’t soon forget. It totally changes the texture of eggs; you may never eat them any other way again. I know of no better brand than Philadelphia cream cheese. Again – it bears repeating – beware of the lower-fat version. Read your label to make sure fat is the predominant ingredient and you’ll be good to go.
Your body is going to be like an angry child having a tantrum – IT WANTS SUGAR AND CARBS NOW, but you aren’t going to give it any are you? ARE YOU??? Just like with children, the key is to distract, distract, distract (oooh shiny!). Give it something else desirable, (bacon, cheese, etc.) even if it isn’t what it really wants. Don’t give in thinking you’ll feel better if you just eat a little bit of carbs – there is no compromising!
I am SO THANKFUL for you and this blog!! I am staring the Keto Diet today but have been researching for a week. So many sites, so many recipes but no PLANS. I like structure and I like following a set plan, so when I found that you have 3 day, 7 day, and 14 day plans along with an egg fast and a soup fast, I was SO EXCITED!!! Certain studies suggest that keto diets may “starve” cancer cells. A highly processed, pro-inflammatory, low-nutrient foods can feed cancer cells causing them to proliferate. What’s the connection between high-sugar consumption and cancer? The regular cells found in our bodies are able to use fat for energy, but it’s believed that cancer cells cannot metabolically shift to use fat rather than glucose. After increasing water intake and replacing electrolytes, it should relieve most all symptoms of Keto Flu. For an average person that is starting a ketogenic diet, eating 20-30g of net carbs a day, the entire adaptation process will take about 4-5 days. My advice is to cut your carbs to fewer than 15g to ensure that you are well on your way into ketosis within one week. If you are experiencing any more keto flu symptoms, double check your electrolyte intake and adjust.
I have a question on sugar since I see it’s not allowed. Is splenda or any other sugar subsitute ok? What if one of the ingredients that is required for a keto recipe contains sugar, does it matter? I haven’t really seen any discussion on how some things may already contain sugar (even if in low doses) may affect the keto diet. Should they be avoided altogether?
Is sour cream keto? If you are able to tolerate dairy, I can’t imagine why you wouldn’t want to add sour cream to just about everything you eat. It’s such a rich source of fat while providing amazing flavor and luxurious texture to anything you eat. I’ve put sour cream on top of steak, eggs, even vegetables. Just a couple of tablespoons of sour cream will give your fat intake the boost it needs to help you get into that glorious state of nutritional ketosis. I use the full-fat versions of either Breakstone’s or Daisy, depending on which is on sale. They go on something I eat just about every day. Enjoy!
Over 8–10 mmol/l: It’s normally impossible to get to this level just by eating a keto diet. It means that something is wrong. Regarding dark chocolate, I’ll have to check out the Taza, as I’ve never heard of it before and it sounds a little similar to my favorite: Endangered Species 88% (chocolatebar.com). It has a slightly coarse mouth-feel — much more interesting than, say, Ghirardelli, which I find too smooth and bland — and the flavor has hints of coffee bean.

I am going to give the three day plan a try and then hope to move on to Week 1 and 2. I’ve used so many of your recipes in the past and people absolutely RAVE about them. I just made your Cream Cheese Pancakes and they were really, really good! I am pretty good about eating low carb so I haven’t had anything even resembling a pancake that I didn’t feel guilty about.
